Grapes are harvested by hand and crushed in fermenters the same day. For a week to 10 days, the cap is punched down two times a day to brake up the skins and other materials that float to the top of the vat during fermentation. The wine is then drained for dryness where the skin is transferred by hand to a press. - Fungicide:
